So, you want to talk about Medieval food?

Well, I’m hoping that’s why you came here.

The recipes I am using are based off of real Medieval recipes written centuries ago and I am going to try and recreate those dishes.  I’m also going to try and understand the history of food during that time, why did people eat certain things? How did they prepare them? Did they actually eat rotten meat with lots of spices? Add to that, I’m also going to take these Medieval recipes and use them as an inspiration for dishes that would be welcome today.

This here is the place (I hope) to find those recipes as well as a little history on the food and the people during the Middle Ages.  Come and enjoy the recipes I’ve made, delight in the history and maybe you might be inspired with some of the ideas that are created.

So welcome.  Have fun.  Let’s explore history together.

About Me

Hi, I’m Will!

Cooking Medieval is my own little kitchen online where I get to enjoy two of my favorite passions, history and cooking.  Both of these passions have been brought to reality separately in my life. I’ve participated in both Civil War reenacting while in High School and I’ve been cast in several Renaissance Faires as various characters, from a gravedigger to the actual master cook to the Queen of England. As for cooking, I’ve worked in professional kitchens for over 13 years, ranging from a breakfast cook to a head baker and even at one point being the head chef at a private school.

The Food!

Since I was 12, I’ve always enjoyed being in the kitchen, whether it was cooking or eating.  Whether I was learning from my mom or trying something new I saw on TV, I was always fascinated by the whole process of cooking.  In culinary school, I really got to understand my passion for cooking and realize that one of the joys I have when I cook is watching people enjoy a dish that I have created.  I also had a new found freedom as I made all types of delicious items, from bacon & potato soup and tomato gazpacho to sticky toffee pudding and even maple sausage ice cream, there is something about cooking that allows you to find a creativity you never thought possible.

It’s one of the reasons I became a chef and it’s one of the reasons I created this blog, to share with everyone the recipes I have created and enjoyed.

The History!

I love history.  It has always been a part of my life since I was a kid, mainly since my family lived in Scotland for a few years when I was around 4 in a small town called Lanark and we had a castle about 15 minutes away for me to run around in.  I couldn’t get enough of the history that surrounded me in Scotland and I’ve kept that passion ever since.

For me, I like to understand every little aspect of the how’s and why’s things were done.  So, what basically started as a random conversation at a Renaissance Festival about lunch for peasants eventually turned into my obsession with Medieval food history.  I promise not to get too crazy about the food, but if I get to excited about some of the more interesting things I’ve found out, you’ll understand why.

The Family!

My greatest joys in life, my two daughters Charlotte and Roselyn.  From our travels around, our ups and downs, and everything in between, I will tell you all of my adventures of being a busy dad and everything that goes with it.
