Medieval Mushrooms in a Chef’s Life

Every once in a while, I get the pleasure of making a customer a dish that is my own creation and today I was allowed to do that. For a little context, I work at a catering company that specializes in meals for private airlines and yes, we have a set menu for the majority of the people we service, but there are exceptions, like today.

To be honest, it was a simple request. A cheese omelet with sauteed mushrooms… and in a burst of inspiration, I made mushrooms from a recipe in the Forme of Cury. As I made this, I thought of two things. First, tonight someone gets to dine like a King. Secondly, yes, recipes from the Middle Ages may have a place in today’s world.

It’s something I have thought of for years and it’s time I actually sat down and really explored this idea. Can a recipe from the Middle Ages help in the cooking world of today? I think so, and I’m going to see where this adventure leads me to.

So, with that, let’s embark on the journey into the tastes, the temptations, the triumphs and the tragedies, the tests and trials, and a couple other things that start with T. We shall feast on good food, good drink, and good company. Anon and God spede you until we meet again.
